Healthy Banana Muffins With A Peanut Butter Protein Punch

Attention all peanut butter lovers!

If you’re looking for a delicious and nutritious breakfast on the go, we've got the recipe for you. These healthy banana muffins are gooey, delicious, and packed with protein!

They’re great for those days you’re rushing out the door in the morning, and are the perfect accompaniment for picnics and outdoor events since they’re quick to grab and easy to transport.

Don’t be fooled, these aren’t your grandmother’s Sunday morning muffins. Instead of the traditional bleached flour so many of us grew up baking with, these muffins contain… absolutely no flour.

That’s right! These bad boys are flour-free, so anyone avoiding gluten is able to eat them!

Aside from being gluten free, we haven’t added any refined sugar to these, either. So, you’ll be able to enjoy them guilt free.

I got the idea for this recipe when I was craving some pre-packaged muffins I grew up eating and loving. But the problem with the store-bought ones is that they’re chock full of refined sugar, flour, and ingredients I can’t pronounce for the life of me.

So I decided to create my own healthy version that came with all the ooey-gooey deliciousness of my beloved pre-packaged muffins, but with none of the unpronounceable ingredients.

Just take a look at the ingredient list below...I bet you recognize and can pronounce everything on it!

Ingredients

• 2 ripe bananas (a day or two overly ripe is best)
• 1 cup creamy peanut butter
• 2 scoops of plant-based protein powder
• 2 eggs
• 3 teaspoons vanilla extract
• 3 tablespoons honey
• 1 teaspoon baking powder

Serving size: 2 muffins (roughly 200-250 calories)
Recipe yields: roughly 24 mini muffins

Directions

-Preheat the oven to 400 degrees. Line mini muffin pan with cupcake liners. (These are optional, but I’ve found they make it much easier to take the muffins out of the pan and serve them.)
-Mash up the bananas in a medium sized mixing bowl until there are no chunks.
-Add the peanut butter and mix until combined.
-Combine protein powder and baking powder and add to mixture.
-Stir in the eggs, vanilla extract, and honey.
-Add in any mix-ins such as chocolate chips or walnuts.
-Fill each liner ¾ of the way. (They don’t puff up much, so don’t skimp!)
-Bake for 7-10 minutes.




Mix It Up!

Part of what makes muffins such a fun breakfast or snack is picking the mix-ins!

Since these muffins have peanut butter in them, one of the most obvious mix-ins, and a personal favorite, is chocolate chips.

If you’re looking to be a little more health conscious, you may want to consider adding nuts or dried fruit.

But honestly, these muffins are delicious without any add-ins!

No Protein Powder? No Problem

The first time I was messing around with a healthy banana muffin recipe, I didn’t add protein powder at all.

These muffins are great with, or without, the addition of your favorite protein powder, so if you don’t happen to have any in the house, don’t fret! It’s not a crucial ingredient.

Dress It Up

While these muffins are great for on the go snacking and quick breakfasts on the way out of the door, they can certainly be dressed up if you’re hosting Sunday brunch.

Simply baking the muffins in designer cupcake wrappers gives them more of an upscale look!
